Ingredients

1 Bunch Kingfisher watercress, coarse stems discarded

1 Celeriac, cut into matchstick strips

2 Heads chicory

1 Bunch spring onions

2 Tbsp Olive oil

1 Tbsp Vinegar

1 Tbsp Capers

2 Tbsp Mustard

Handful of parsley

1 Tbsp Lemon juice

Method

  1. Combine the watercress, celeriac, chicory and spring onions together in a large salad bowl.

  2. Add the olive oil, vinegar, capers, mustard, parsley and lemon juice into a jar. With the lid on, shake to create a dressing.

  3. Pour the dressing over the salad just before serving.
