ingredients

5 Medium tomatoes

1/2 Green pepper

1/4 Onion

1 Garlic Clove

Chunk of white bread

2 Tbsp Vinegar

5 Tbsp Olive Oil

Pinch of salt

method

  1. Start by soaking the white bread in water - it helps if the bread is a few days old.

  2. Blanch the tomatoes and remove the skin. Slice and add to the bowl with the soaked bread. Cut the pepper, onion, cucumber and garlic, add to the bowl.

  3. Add the vinegar, olive oil and salt to the mix. Blend until smooth.

  4. Leave to cool completely in the fridge, before serving.
