The quickest, easiest and yummiest dinner.

Ingredients

2 Bunches Kingfisher watercress, roughly chopped

50g Unsalted butter

2 Onions, chopped

2 Tbsp Olive oil

Salt and pepper

350g Mashed potato

A pinch of ground nutmeg

4 Eggs, poached

Method

  1. Melt the butter in a pan. Cook the onions on medium heat until soft. Add the watercress and fry until wilted. Remove from heat.

  2. In a separate pan, heat the oil. Fold the watercress and onion into the potato, season.

  3. Turn the mixture into the pan, cook for 10 minutes on a medium heat. Do not disturb. After 10 minutes turn over and cook for a further 10 minutes.

  4. To serve, divide between 4 plates. Top each portion with poached egg. Enjoy!
