The creamiest vegetarian pâté, absolutely delicious over a watercress and cheese scone with a dash of butter.

Ingredients

2 Bunches Kingfisher watercress

100g Cottage cheese

50g Cream cheese

2 Spring onions, roughly chopped

Pinch of salt & pepper

Method

  1. Roughly chop the watercress, discarding of the coarse stems. Then fry in butter for about 5 minutes.

  2. In a food processor, blend the watercress with the cottage cheese and cream cheese until creamy.

  3. Stir in the spring onions until combined.

  4. Add a little milk if the texture is too dry. Season to taste.
